




| Cornish Hens with Cranberry Stuffing Cornish Hens with Cranberry Stuffing are a great alternative to turkey . 4 cornish hens, rinsed and dried 1 cup chopped fresh Cranberries 2 T sugar 1/4 cup minced onions 1/4 cup chopped celery 4 T melted butter 2 T chopped parsley 1/4 tsp. chopped Rosemary 4 cups stuffing croutons, homemade or bought liquid, as needed (chicken broth, cranberry juice, apple juice or water)as needed Salt and Pepper Preheat oven to 400. Combine berries and sugar and let set for 30 minutes. Saute onions, celery and parsley in the melted butter in a small skillet. Combine crumbs and seasonings in a large bowl. Add the onion mixture and the cranberry mixture. Mix well, adding liquid as needed to achieve a moist, but not soggy, stuffing. Stuff the hens with about 1/2 cup stuffing in each and place breast side up in a greased, shallow roasting pan (a 9 x 13 works well). Roast uncovered for 45 minutes to 1 hour, until juices run clear and the hens are nicely browned. Remove from the oven and let rest 10 minutes before serving. Serves 4 |
